Water retention post work outs

I have finally gotten back to working out. I worked out M, T, W, & Saturday after having spent the last 3 months being lazy (still following MFP though). I understand as your muscles repair themselves and after working out, our bodies retain water. My question is, how long does it take for your body to get used to it? Meaning, when does your body not retain as much water? If it ever does.

Speaking of working out, I have been killing my workouts, mostly legs (I love leg day, I despise arm day). How long does it take (on average, we're not scientists) to build muscle? I'm very much a number person (I'm working on not weighing myself as much as I do now) and over the course of the last 3 weeks I seem to be floating between the same 2 numbers. I am strictly following MFP and understand it could be water retention, muscle, etc.

My "plateau" isn't killing my motivation. I plan on still killing my work outs at the gym and continuing MFP because eventually, the weight/fat will come off. I'm mainly looking for some science behind how our bodies act :)
